Resumo:
The objective of this study was to develop a strategy to the restaurant Salada.com where he got to maintain a demand level balanced during the whole day, avoiding picks of customers concentration and minimizing idle capacity periods. The theories of Porter and Mintzberg helped in the analysis of the atmosphere that the store is inserted. Besides, the segmentation of Kotler and the concepts that characterize the services also gave the necessary theoretical support so that they were identified relevant characteristics. To lift practical subjects of the restaurant they were made qualitative interviews with the owners, with the manager and with some customers, besides the researcher's daily observation. Since then, a strategy of performance was created, where together with a financial analysis of the today and of the foreseen for the future, the viability was verified of the proposed in this research.
