[pt] Esse artigo tecnológico busca analisar os problemas que a rede de restaurantes americana Outback Steakhouse enfrenta com a gestão das filas de espera em uma filial localizada na cidade de Niterói, no estado do Rio de Janeiro. O artigo busca compreender o contexto operacional do restaurante Outback por meio de análises da gestão da capacidade, teoria das filas e psicologia das filas, a fim de elaborar um plano de ação que mitigue o impacto negativo das filas em suas operações. Ao final, pode-se compreender que através de estratégias tanto de expansão da capacidade, quanto de alteração dos processos internos é possível minimizar o tempo de espera e o comprimento da fila.

[en] This technological article seeks to analyze the problems that the American restaurant chain Outback Steakhouse faces with the management of its waiting lines at a branch located in the city of Niteroi, in the state of Rio de Janeiro. The article seeks to understand the operational context of the Outback restaurant through analyzes of capacity management, queuing theory and queuing psychology to develop an action plan that mitigates the negative impact of queues on its operations. In the end, it was possible to understand that through strategies for both expanding capacity and changing internal processes, it was possible to minimize the waiting time and queue length.
